New kitchen, new ingredients. I never was a big fan of asparagus but it looked so cute piled up in neat bunches at farmers market that I had to buy it!
And now...what to cook? Pasta and soup sounded to banal so I decided to go for something fancy: asparagus wrapped in turkey breast and bacon with cream and mustard sauce.
1 bunch of asparagus
4 turkey breasts
8 thin rashes of smoked bacon
bunch of fresh rosemary
For the sauce:
1 tbs whole grain mustard
1 tbs honey
6 tbs double cream or creme fraiche
seasoning
Preheat oven to 200C, mix mustard and honey, put aside. Wrap 4-5 asparagus in turkey breast. Add one spring of rosemary and wrap in two bacon rashes. Place into a oven proof dish. Do the same with all four pieces. Put some of the mustard-honey mixture on top of each parcel, season.
Bake for at least 20 minutes. Mix rest of mustard and honey with cream and season. Pour the sauce onto the dish, bake for 5-10 minutes. Serve with new potatoes and glass of white wine.
